Cornbread Salad
Ingredients:
1 8oz. pkg jiffy cornbread mix
1 lb. mild ham sausage
1 medium onion diced
½ large green pepper diced
2 med.- lrg. tomatoes diced
½ cup bread & butter pickles diced
salt & pepper to taste
½ cup mayonaise (heaping)
2 Tsp. pickle juice
Directions:
Mix jiffy cornbread and bake as directed on box. While cornbread is cooling brown sausage in skillet then drain and set aside. After cornbread is completely cooled crumble in a large mixing bowl. Add onion, green pepper, tomatoes, pickles and sausage. Stir lightly then add mayonaise, pickle juice, salt and pepper. Stir gently with a very large spoon until completely mixed. Cover and refrigerate for at least 1 hour before serving. The longer it sits in the fridge the better it tastes.

Tip: This is a great dish to take to picnics and covered dish functions. If you'd like, you can crumble bacon I this salad as well.

Marsha's Macaroni Salad

1 16ox box of elbow macaroni
1 Cucumber diced
1 Small onion diced
1 Tomato diced
1/2 Jar of Hormel bacon pieces (or 5 slices of bacon crumbled)
1/2 Cup of olive slices (green and/or black olives)
11/4 Cups Miracle Whip salad dressing
Salt to taste (I used approx. 2 tsp. seasoning salt)
Pepper to taste
Cook macaroni and rinse until it is cool. In a large bowl add macaroni and other indredients. Stir until completely mixed. Add more Miracle Whip if necessary so the salad is a creamy consistency.
Enjoy!
Tip: This is a great salad to take to picnics and other covered dish functions. Once you've eaten your fill, place remainder in a airtight container in the fridge. When you remove it to eat more leftovers, if you feel it has become a little dry, you may need to add a bit more miracle whip.
